Tommy Conlon: Simple Leitrim boxty is fit to grace any plate

For the Easter weekend, a few days back at the homestead in Ballinamore. Breakfast on one of those mornings always involves boxty. And a spot of shopping in the local supermarket will always involve a few packets of same from the chill cabinet, for a taste of Leitrim when I’m no longer there.
