“Pardulas are like small cheesecakes or tarts. They were originally prepared for Easter but nowadays can be enjoyed in Sardinia all-year round. The sweet and aromatic citrus filling is made with ricotta, saffron, orange and lemon zest and is held together by a semolina-based enriched pastry, which i
