Dear Vicki: What should I do with staff who say ‘that’s not my job’ when asked to do side-work?

Q: I run a small gastropub. Lately, whenever I ask my floor staff to help with basic "side-work” – such as polishing cutlery or restocking the bar during a lull – I get sighs and “that’s not really our job” comments.
